Preservation, Blanching and Microbial Control

Sodium metabisulfite (Na₂S₂O₅) is an essential preservative and antioxidant used in food processing. It extends the shelf life of dried fruits, fruit juices, dehydrated potatoes, wine, and certain cured meat products. Its antioxidant and antimicrobial properties reduce microbial load and prevent enzymatic browning.

With a purity above 98.5%, it has a pH between 4.0 and 5.0 in a 10% solution and contains approximately 65% available sulfur dioxide. It appears as a white crystalline powder, highly soluble in water.

Compliant with Codex Alimentarius, JECFA, FCC standards, and Regulation (EC) No. 1333/2008, products containing more than 10 mg/kg must be labeled “contains sulfites”. Shelf life is up to 24 months when stored in a dry place, protected from light, at temperatures below 25 °C.
